As fate would have it, in July 2013 they came back to Cairns! Over the past 6 years, my family; Max, Francoise, sister Davina and her husband Patrice Perna have worked tirelessly around the clock to bring the wholesale back up to its renowned standard and I couldn’t be prouder! My family’s background is in the Hospitality industry and thus they bring a large component of that into their work here, having great respect for their produce and a passion for food creation, especially in the smoked seafood they create. As it currently stands, the new generation is taking over the running over everyday business with Max & Francoise looking at taking a step back and eldest daughter Davina and husband Patrice stepping in. Youngest daughter Dorine and partner Josh help out when required.
After coming back to Cairns and taking the business back over, they opened up a New Retail Shop 5 years ago as well as continuing the Wholesale Business. In addition to this, in March 2019, they opened up a Brand New Fish & Chip Takeaway. Both the retail shop and the fish and chip takeaway is in the same complex as the wholesale!
We stock a diverse range of Fresh, Frozen, Cooked, Raw (Green) and Homemade Smoked Products (over 20 years experience). We have so much passion for this industry and will try our hardest to accommodate for you. Not only do we have beautiful local fresh fish fillets but you can also purchase whole fish for your BBQ and for the oven. We have a superb team who work to cut you the freshest fish and shuck you the best oysters on premises! As we are supplying a large amount of restaurants in Cairns, our seafood range is immense! Preston Fresh Seafood is our family owned and run business Seafood Wholesale and Retail and Now Fish & Chip Takeaway. It was originally established in 1993 by Max and Francoise Pantacchini trading under the name Pantacchini’s Gourmet Foods. It started off as a two-person operation and within a couple of years Max and Francoise had over 30 staff members and five trucks supplying seafood to over 200 restaurants, hotels, casinos, pubs, island resorts, luxury boat cruises, surf clubs and takeaway shops ranging from Cape York to Townsville as well as Interstate and International to Japan and the USA. They also established a retail shop opposite the James Cook University for 5 years. All of this took place whilst my sister and I were under the age of five, incredible I think!
Max and Francoise are both highly regarded and respected in the seafood industry. In fact, they supplied seafood to her Majesty the Queen Elizabeth II on her visit to Cairns in 2002! They have also formed alliances with renowned celebrity chefs and food consultants by the names of Neil Perry, Rick Stein, Tetsuya, Alastair McLeod, Manu Feildel, Ben O’Donoghue, Geoff Jansz, Guy Grossi, Maeve OMeara, Alison Alexander, Bill and Robert Marchetti, Joanna Savill, Huey, Stefano Manfredi – the list goes on!
After running the show for 14 years, Max and Francoise sold the renowned business in 2007 and moved South down the coastline to work as seafood contractors for 6 years.
